Avocado and Mango SalsaI literally just told you on Saturday that I wanted to try this recipe from SkinnyTaste.  Well, guess what?  I tried it yesterday and just couldn't wait to share it with you.  Typically, the recipes I post are ones I've made from at least a week ago.  But, ladies and gentlemen (yes, I do believe there are men out there that read my blog) I interrupt this program to give you one amazingly scrumptious salsa recipe.

My favorite salsa up to this point has been this Pineapple Mango Salsa, which I can turn into a wicked pizza as well.  But, this new salsa comes in a very very close second.  Although, if I compared them side by side, there is a chance the latter could beat out the former.  The avocado adds richness to the flavor and the sweet mixed with the saltiness of the chips is lip smacking wonderful.

Avocado and Mango Salsa

Printable Recipe

Yield: 5 servings

1 mango, peeled and diced
1 avocado, peeled and diced
1 Roma tomato, seeded and diced
1 clove garlic, minced
1 jalapeño, seeded and diced
¼ cup chopped fresh cilantro
Juice from one fresh lime
¼ cup chopped red onion
1 Tablespoon olive oil
Salt and pepper, to taste

Stir together all ingredients in a medium bowl.  Cover and let the flavors blend in the refrigerator for at least 30 minutes before serving.
