Hi Katie,
For these, I used a cookie cutter to cut out the crust. Otherwise, for larger tarts and pies, you use a fluting method with your fingers. Here is a video that is helpful: http://bcove.me/pc79hmsh

Wow those look good! You know what, I often see little tartlets that have the same kind of crust as yours, and I never knew how to make the crust that shape. Can you explain to me how to make the top of the crust shaped like how you did in the picture?
