I'm sure you know more than I about baking cakes. However, I was intrigued by your cake sinking b/c of how you prepared your cake pans. I started a quick search on sunken cakes and found a few articles about people's carrot cakes sinking in the middle and found possible reasons and solutions. Some reasons include low/problematic oven temperature, opening the oven door prematurely, mixing the batter too much, not getting enough air in the batter, even the thought of trying a new recipe, and so on. Anyway, I don't think the problem is from the cake release. I suggest looking on the internet for any possible reasons for your sunken cake that pertain particularly to your situation.
